As for the preparation of Gongura Pachadi and the ingredients we use-
With freshly picked gongura leaves/sorrel leaves are chopped and stirred in a pan while the seasoned spices such as fenugreek seeds, coriander seeds and red chillies are slowly roasted. These are ground or blended in a mixer to obtain fine powder which is mixed with oil and the leaves which become softer and smoother. Blending them together, we get the finest of pickles, rich in nutrients and taste. Serve the hot pickle with rice, ghee and finely chopped onions on the side and nothing beats the taste of it.
Some people prefer adding garlic to the mix as it gives off extra flavour, piquant and strong smell of garlic only makes the already yummy pickle a lot more flavoursome and complete. In the modern day, it is more preferred as it is served this way in several hotels and on occasions.
Ingredients: Freshly picked gongura/sorrel leaves, fenugreek seeds, coriander seeds, salt, red chillies, garlic (depending on preferences), sesame oil.
