Kandha, more commonly referred to as elephant foot or yam, is actually a tuber of Amorphophallus campanulate plant. it is cultivated across India as a cash crop and used as vegetables. although the name sounds quite worrying, its actually very tasty and full of health benefits. We bring forward a unique twist to this vegetable called elephant foot mixture and it can be included in your daily diet as a snack.

METHODS AND PROCESS INVOLVED IN PREPARATION

Properly cleaning the elephant foot or yam in water and then boiling them with a pinch of turmeric powder. Then peel the skin and mash the elephant foot or yam, then add gram flour and some seasoning spices such as cumin seeds, red chili powder, sesame seeds and knead the dough. When the dough is perfectly soft take a small portion and transfer it into a sev maker machine. Press them gently to make round concentrate circles directly into the pan containing oil to deep fry them. These mixtures are deep fried using medium hot oil to get a crispy and crunchy kandha mixture. Then adding the fried peanuts and curry leaves to this mixture still enhances its taste and flavors.

The key ingredients involved in making the Kandha mixture are elephant foot or yam, cumin seeds, sesame seeds, gram flour, asafetida, ghee, peanuts, curry leaves and oil. This mixture is very unique and definitely tastes different.

elephant foot or yam has a good number of antioxidants and beta carotene properties which help in boosting the immunity of the body. It contains many vitamins and minerals, which are beneficial for our health. It also contains a sufficient number of calories, fat, carbohydrates, protein, potassium and fiber.
